New year new loaf for Saturday 13 January 2024 at COGS. This is a take on the classic Roman dish cacio e pepe (literally “cheese and pepper”). It contains, you’ll be surprised to know, cheese and pepper. Also some olive oil. Actually, there are four types of cheese: Riverford Farm’s parmesan, pecorino from Sardegna, Belton Farm mature cheddar and Belton Farm Red Leicester.
I won’t be making these often and there are only a handful going so get down to COGS first thing and hand over the outrageous sum of £5.50 (cheese is eye-wateringly expensive).
