Merton cheese and pepper

New year new loaf for Saturday 13 January 2024 at COGS. This is a take on the classic Roman dish cacio e pepe (literally cheese and pepper”). It contains, you’ll be surprised to know, cheese and pepper. Also some olive oil. Actually, there are four types of cheese: Riverford Farm’s parmesan, pecorino from Sardegna, Belton Farm mature cheddar and Belton Farm Red Leicester.
