My name is Simon Ellis and I am actually a dancer and choreogapher who works at the Centre for Dance Research at the University of Coventry. I was born and raised in Aotearoa New Zealand, lived and danced for a long time in Melbourne and then came to the UK in 2006 after I finished my PhD.

I started baking bread in 2009 out of frustration with trying to find real bread.
