Why Merton?

Thomas Merton was a Christian Trappist monk known for (among other things) his exploration of Zen Buddhism. My mother Gabrielle Eastwood Ellis was inspired by his thinking and writing about contemplative life. Merton Bakery is named in memory of Gabrielle who taught me so much about how to live with care and dignity. But it is also called Merton Bakery because those monks knew a thing or two about fermentation.
